Beta-Carotene Cubes

This is a great way to get nutrients into the pickiest eater.  They are fun, bright orange ice cubes. You can use many vegetables for this. The following vegetables are SCD-compliant, but any vegetables will work.

Cook and puree any or all of the following:

Butternut squash
Yellow summer squash
Even canned organic pumpkin if you are in a hurry
Splash of orange or pear juice (optional)

Blend in the blender.  Use orange juice and/or water from cooking the vegetables to blend.  Freeze in ice cube trays.  Use 1-2 ice cubes when needed.  Use juice to sweeten the cubes for picky eaters that want to lick (taste) the cubes before adding them.  Add to smoothies, meatballs, etc.
