Gluten-Free Cutter Cookies
Preheat oven to 350 degrees
In a mixing bowl, combine:
2 1/4 cups tapioca flour
1 teaspoon salt
1/3 cup sugar
1/2 teaspoon guar or xanthan gum
In a blender or food processor, place:
1 cup macadamias
1/4 cup water
1/2 cup canola oil
1 teaspoon GF vanilla
Grind the nuts very fine.
Add contents of food processor to bowl
of dry ingredients and mix.
Roll into balls and flatten.
Bake on greased cookie sheet at 350 degrees for 10-15 minutes or until
they begin to turn golden brown.
