3 cups organic cashews (the texture and flavor make cashews a great choice for this ice cream, but others can be
3 cups purified water
2 vanilla beans
1 - 1 1/2 cups maple syrup or other sweetener (amount will vary depending on sweetener and ice cream
Slice open the vanilla beans and scrape soft inside into blender with
cashews, water and sweetener.
Blend on high until smooth.
Place blender or mixture in freezer for 45-60 minutes to chill.
Pour the mixture into an ice cream maker and freeze.
It's best to make homemade ice cream and serve it immediately.
If you freeze it, it often freezes solid or icy.
