Non Dairy Stevia Pudding

Do not use too much stevia. One drop too much and it will taste like bitter artificial sweetener.  Always start with 1/2 the suggested amount and slowly increase it until desired sweetness is reached.  A dash of salt and/or nut butter can help cut any "super sweetness."

2 tablespoons carob or cocoa powder
1 teaspoon stevia extract powder
6 tablespoons of arrowroot powder
2 cups almond milk (or rice milk)
2 teaspoons vanilla extract
1 tablespoon nubutter (optional)
Dash of salt

Combine carob/cocoa, stevia, and arrowroot in a double boiler pan.  Gradually stir in milk and water.  Place over boiling water and stir as mixture thickens.  Reduce heat to low and continue cooking another minute.  Remove from heat.  Stir in vanilla, and nut butter and salt if desired.  Serve warm or chilled.
