Pour 2 quarts of yogurt in a strainer lined
with a tea towel or muslin cloth (wash before first use). Leave it
covered at room temperature.
After the initial liquid has dripped
out, tie the two ends of the towel over a large spoon so you can
suspend the yogurt better.
Hang spoon over a bowl or pitcher to
capture liquid overnight. Place whey in clean
glass jars and store in the refrigerator.
