This is not concentrated whey protein powder.  Whey is the liquid that separates from yogurt and is rich in good bacteria.  It helps with the absorption of nutrients, fermentation of grains and vegetables, and has many more uses.

This recipe can be made with whole milk yogurt, goat yogurt, or raw milk yogurt.

Pour 2 quarts of yogurt in a strainer lined with a tea towel or muslin cloth (wash before first use). Leave it covered at room temperature.  After the initial liquid has dripped out, tie the two ends of the towel over a large spoon so you can suspend the yogurt better.  Hang spoon over a bowl or pitcher to capture liquid overnight. Place whey in clean glass jars and store in the refrigerator.
