Pear Sauce

An essential for children (and adults) sensitive to salicylates.  Great substitute for apple sauce.

This is the basis for pear baby food - adjust by avoiding sugar and spices.  Blend well.

4 pounds pears
1/2 cup water
2-4 tablespoons sweetener - optional (use honey on SCD but not for baby food, maple syrup, evaporated cane juice)
A pinch of cinnamon and nutmeg (avoid for baby food and low phenol diet)

Use any variety of pear - tree-ripened are the best option. 

Peel and cut up fruit.  Place the fruit in a saucepan with a few tablespoons of water.  Cook on medium/low heat and stir until the fruit simmers, then lower heat and cook until fruit has cooked down and is soft.

Add sweetener if necessary.  Blend for smoother texture.
